Watermelon, Heirloom Tomato, and Feta Salad served with Grilled Chicken

For some recipes, the word "yum" doesn't quite do justice to how good they can be. Like this one. Combining watermelon, one of our favorite summer treats, with the juicy complexity of a great heirloom tomato, the creamy salty flavor of good feta cheese and freshly grilled chicken is an absolute culinary je ne sais quois. Best of all, this salad is light as a feather. It's perfect for a summer lunch or dinner, for the rest of the year for that matter. Plus it's brain-dead simple and quick to make. What's not to like?


Watermelon, Heirloom Tomato, and Feta Salad served with Grilled Chicken

Prep Time: 10 mins | Cook Time: 0 min | Servings: Makes 6 servings | Difficulty: Easy

Ingredients:

Dressing:
2 tablespoons chopped mixed fresh herbs
   Parsley,  chives, mint, basil
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
Squeeze of honey

1 package baby heirloom tomatoes, cut in halves
1 cup (1-inch) cubed red seedless watermelon
1 cup (1-inch) cubed seeded yellow watermelon
1/2 cup crumbled feta cheese (fat free)


Directions:

Whisk together the dressing ingredients in a large bowl. Add tomato and watermelon; toss to coat. Sprinkle with cheese; toss gently. Refrigerate for at least 2 hours before serving. 

Slice up a fresh grilled chicken breast (room temperature) and serve on top of the salad. Drizzle some of the natural liquid from the salad onto of the chicken and serve.
