We’re big believers in a good breakfast to get our day started right. It’s easy to fall into a trap of just grabbing a bowl of cereal or toast before dashing out the door. There’s jam, and then there’s outrageously wonderful jam. We’ve searched far and wide in our travels, and have enjoyed some incredible jams for breakfast with our toast or yogurt. But at a farmer’s market on the Hawaiian island of Kauai, we met our match: the out-of-the-park home run array of hand-made preserves from Monkeypod Jam, an incredible little local company creating some of the biggest flavors on the planet. Such is the case of a treat we found at the Hanalei Farmers Market on Kauai from the Heart Flame Bakery, a very health conscious and outstanding little business on the island. We sampled their breads, pizzas and other absolutely delicious and very healthy baked goods, and were simply blown away. How could organic, gluten-free and vegan products be so healthy and taste so damned good?
Instead of being a big heavy dinner, a Veggie Frittata is light as a feather, light on calories, nutritious, filling, good for you and wonderfully delicious. That might sound like an oxymoron, but it's not. Better yet, it's easy to make. Weighing in at only 182 calories, this is a dinner you'll enjoy without guilt. We bet you'll be asking for a second helping, and the good news is that you can.
